Part 2 of Eoin's chat with Johann Gouws. Today’s guest has a story of resilience that’s nothing short of inspiring. Johann, from South Africa, was misdiagnosed with type 2 diabetes at age 35 and spent six months without insulin, with blood sugars soaring as high as 42.9mmol/L (772.2mg/dL). On top of that, he’s survived aggressive colitis, lives with a stoma bag, and even faced a heart attack that became the turning point in his diabetes journey. Johann is an HR manager by profession, but outside of work he’s a dedicated CrossFit athlete who trains alongside his wife and refuses to let diabetes hold him back. With the support of his community, he was able to access an insulin pump — a device his daughter affectionately calls his ‘Tamagotchi,’ because, just like the toy, it keeps him alive. She even nicknamed him the ‘Diabetic Ranger,’ a reminder that he’s still her superhero, just with a few extra accessories. Since switching to the MiniMed 780G in late 2024, Johann’s life has completely changed. Not only has his confidence and health soared, but he’s now qualified for the 2025 CrossFit Games finals in Las Vegas — proof that diabetes doesn’t define him, it drives him. Part 2 of Eoin's chat with Jason Ziobrowski (Chef Jay Z). Today’s guest brings flavor, passion, and purpose to everything he does. Jason Ziobrowski — or as many know him, Chef Jay-Z — has spent nearly two decades as a corporate R&D chef, creating recipes and nutrition programs for hospitals, patients, and communities. His mission? To influence people positively through food and to help change the American palate, one dish at a time. But behind the chef’s coat is a deeply personal journey. After years of being told he was simply ‘pre-diabetic,’ Jason was finally diagnosed in 2020 with type 1.5 diabetes. At the time, his fasting sugars were nearly 22.2mmol/L (400mg/dL), and his A1C hit 14. Instead of giving up, Jason took charge. He overhauled his lifestyle cold turkey, dropping his fasting sugars down into a healthy range and transforming not just his health, but his outlook on life. Jason Ziobrowski — or as many know him, Chef Jay-Z — has spent nearly two decades as a corporate R&D chef, creating recipes and nutrition programs for hospitals, patients, and communities. His mission? To influence people positively through food and to help change the American palate, one dish at a time. But behind the chef’s coat is a deeply personal journey. After years of being told he was simply ‘pre-diabetic,’ Jason was finally diagnosed in 2020 with type 1.5 diabetes. At the time, his fasting sugars were nearly 22.2mmol/L (400mg/dL), and his A1C hit 14. Instead of giving up, Jason took charge. He overhauled his lifestyle cold turkey, dropping his fasting sugars down into a healthy range and transforming not just his health, but his outlook on life. Today, Chef Jay-Z is thriving with type 1, using technology like the Medtronic pump, leaning on his family, and continuing to inspire others through food, education, and his own story of resilience. Leah has had an innate passion for business, entrepreneurship, and helping others living with Type 1 Diabetes all her life. For the whole weekend Eoin was essentially sedentary and immobile as a result of a recent virus he was fighting off. On top of that, he was dealing with the significant impact it was having on his blood sugar. Eoin was taking dose after dose of insulin, with it having little to no impact on his levels, and spent the whole weekend with his blood sugar being above 13mmol/L (234mg/dL). Conor is a Mixed Martial Arts fighter from Dublin, Ireland, who is now the Senior Irish Welterweight Champion of the sport, and recently made his Cage Warriors professional debut in Rome, Italy - where he beat a very experienced fighter on his home soil. Conor was also only diagnosed with Type 1 Diabetes in 2021, which makes his continued achievements that much more impressive. He knew his A1C wasn’t where he wanted it, and was just the average of too many highs and too many lows each day. He was putting a lot of time, energy, and effort into his training, but not seeing any of the results he wanted - leading to fatigue and frustration. Since then, he’s “made more progress in the last 6 months, than I have over the last 6 years!” Mark has built a significant amount of strength and muscle (without spending hours in the gym each day). Completed a 4km swim, a 6km swim, and his first ever triathlon, all while keeping his blood sugar in the exact place he wanted. Increased his blood sugar time in range % to 90+ each day, week, and month (where he feels his best). Travelled to Brazil eating + drinking unpredictable foods, confidently keeping blood sugars in check. As a result, now has more energy, better quality sleep, clearer focus in work. Upon being diagnosed with type 1 diabetes at the age of 5, she decided she would do everything in her power to advocate for the diabetes community. At 11-years-old, Rudd began advocating to her legislators on Capitol Hill on Diabetes research and policy, which sparked her passion for social change and government. To this day, Rudd has raised over $350,000 for diabetes research and has educated thousands of students through her advocacy work. In April of 2022, she gave a TED Talk, “Diabetes Isn’t a Death Sentence, If you Can Afford It.” While pursuing her graduate degree in Washington, D.C., she interned at the White House for the Policy Office of the Vice President. Emmabella has written her own legislation in the State of Florida and is currently working towards lowering insulin prices on both the Federal and State levels. She has tirelessly worked to advocate for legislation and policies to lower insulin prices and make insulin more accessible in the United States. He is an exceptional weight lifter training out of Glasgow City Barbell, and has recently competed in the British Weightlifting Championships. Part 2 of Eoin's chat with Malala De La Pava (@malaladelapava). Malala was diagnosed with Type 1 Diabetes at the age of 8 when she was in Venezuela, before she moved to Toronto, Canada with her family. Malala speaks about the different experiences she had with her management in Venezuela, compared to in Toronto. When the Covid pandemic started in 2020, she was diagnosed with APS-2 (Autoimmune Polyendocrine Syndrome Type 2) and Addison's disease. This completely changed her life as she now relied on Corticosteroids. This condition is not particularly well known or researched, which led to a lot of uncertainty for Malala. Much of which was learning how Corticosteroids affect her blood sugar levels, and how low cortisol levels can cause extremely low blood sugar levels. Brendan is from Cork, Ireland, and was diagnosed with Type 1 Diabetes at the age of 15, back in 2000. 6 years after his Diabetes diagnosis, he was diagnosed with Crohn’s Disease. Brendan’s Crohn’s disease didn’t cause him too many issues as he “only had to take some medication in the morning to manage it”. When everything in Brendan’s life seemed to be going well; the birth of his first child, buying his first home with his wife, he was then unexpectedly diagnosed with stage 3 Colon Cancer in 2023. Brendan’s story is one of unimaginable pain, worry, and sadness - but how he shares it, and how he survived it can only offer us an opportunity to really appreciate our health, the simple parts of life, and what we have around us.
