In this episode, your host Marcus Taylor is joined by Chris Simcock, who works for Leaft. Leaft is on the cusp of isolating the most abundant protein on the planet, rubisco, which is found in the green leaves of plants. Numerous companies have tried and failed to extract it in bulk in a usable form. The first to do so will change the landscape of our planet forever by reducing world hunger, carbon & methane emissions, and nitrogen leaching. Their team projects protein yields of 2.5 tons per hectare - 4x higher than that of dairy, all grown and harvested in a carbon-neutral way.
