Mollie Engelhart is most well known for starting organic restaurants in Los Angeles, Sage Vegan Bistro. After having an awakening around regenerative agriculture, she began farming and closing the food loop with all the food waste from her restaurants. Seeing how hard it has been for restaurants post-pandemic, she moved to Texas so that she can have more land for regenerative farming. She is currently residing on her farm in Bandera, TX.
