When you evolve you are making a conscious effort to better yourself; you are chosing to take action. One type of pivoting is a forced pivot — you were laid off or the company you worked for went bankrupt. Here you had no option or choice. This is not a form of evolving. But there is a scenario where you can both evolve and pivot all at the same time. For example, you are self-aware and want to do something different, better with your life. You decide to change companies or start your own business.
