Escalators at Sydney’s train and metro stations were out of service for over 13,000 hours last year, with Chatswood and Parramatta worst affected—each experiencing more than 80 days of breakdowns. New data from Transport for NSW, obtained through freedom of information, recorded 2,036 incidents between November 2023 and October 2024. The main issue at train stations was items getting stuck, including 17 cases of shoes caught at the comb plate, along with brake faults and power outages. Mike speaks with John Tibbitts, president of the Lift Engineering Society of Australia, who questions whether escalators would even be approved if designed today due to their complexity and risks. Step chains, a common failure point, require extensive repairs, while comb plates are designed to break to prevent bigger issues. Tibbitts, who helps write safety codes, warns that escalators can be dangerous, especially for kids and teenagers, who often get fingers caught or pinch themselves while sitting on the steps. This week Sarah whips up Thai Chicken Satay with Peanut Sauce (Courtesy recipetineats.com) Ingredients 400 g/14oz coconut milk (1 can), full fat 13-16 bamboo skewers, 16cm / 6.5″ long MARINADE: 600 g / 1.2lb chicken thighs, boneless skinless, cut into 2cm/4/5″ pieces 1 tbsp curry powder 1 tsp white sugar 2 tsp red curry paste 1 tsp cooking salt / kosher salt (sub 1/2 tsp table salt) THAI PEANUT SAUCE: 2 tbsp red curry paste 180 g natural peanut butter, smooth 50 g white sugar 2 tsp dark soy sauce 1 tsp cooking salt / kosher salt (sub 1/2 tsp table salt) 2 tbsp cider vinegar 180 ml water SERVING: 2 tbsp peanuts finely chopped Lime wedges (optional) Coriander / cilantro leaves and sliced red chilli (optional) Instructions If cooking on a BBQ or over charcoal, soak skewers for 2 hours in water. THAI CHICKEN SATAY SKEWERS: 1. Mix together the chicken and Marinade with 1/4 cup of coconut milk, then set aside for at least 20 minutes, or overnight. 2. Thread onto skewers – I do 4 to 5 pieces each. 3. Heat 1.5 tbsp oil in a large non stick pan over medium high heat. 4. Cook skewers in batches for 3 minutes on each side until golden. THAI PEANUT SAUCE: 1. Place remaining coconut milk and Peanut Sauce ingredients in a saucepan over medium low heat. 2. Stir to combine then simmer, stirring every now and then, for 5 minutes. 3. Adjust consistency with water – it should be a pourable but thickish sauce. 4. Cover with lid and keep warm while cooking skewers. SERVING: 1. Pour some sauce into a bowl. Sprinkle with some peanuts – stir some through if you want. 2. Pile satay skewers onto a platter, sprinkle with remaining peanuts, coriander and chilli. 3. Serve with sauce on the side for dipping. This week Sarah whips up Classic Lamingtons (recipe courtesy womensweeklyfood.com.au) Ingredients 4 eggs 2/3 cup (150g) caster sugar 1 cup (150g) self-raising flour 1/4 cup (35g) cornflour 25 gram soft butter, chopped 1/3 cup (80ml) boiling water 4 cups (270g) desiccated coconut Chocolate icing 4 2/3 cups (750g) icing sugar mixture 1/2 cup (50g) cocoa powder 20 grams soft butter 3/4 cup (180ml) milk Method 1. Preheat the oven to 180°C (160°C fan-forced). Grease and flour a 20cm x 30cm lamington pan, line base with baking paper 2. Beat eggs in a small bowl with an electric mixer until light in colour. Gradually add sugar; beat for 8 minutes or until the mixture is thick. Mixture should form thick ribbons when the beaters are lifted. 3. Meanwhile, sift flour and cornflour together three times. Combine butter and boiling water in a small heatproof bowl. 4. Transfer egg mixture to a large bowl. Sift the flour mixture over the egg mixture; using a balloon whisk or a large metal spoon, gently fold the flour into the egg mixture, then fold in the butter mixture. 5. Pour mixture into prepared pan. Bake in a moderate oven for about 25 minutes or until sponge springs back when touched lightly in the centre and comes away from side of pan. Turn cake onto a wire rack to cool. 6. Cut cake into 20 even pieces 7. Meanwhile, to make chocolate icing, sift the icing sugar and cocoa into a large heatproof bowl; add the butter and milk; stir over a medium saucepan of simmering water until icing is smooth and thick enough to coat the back of a spoon. Divide icing mixture into 2 small bowls. 8. Place coconut in a shallow bowl. 9. Using a large fork, dip each piece of cake briefly into icing until cake is coated in icing. Hold over bowl to drain off any excess. Dip half the cake pieces in one bowl of icing and the other half in the second bowl of icing. (We have separated the icing into two bowls, as cake crumbs will thicken the icing and make it difficult to use.) If the icing becomes too thick, stand it over hot water while dipping, or reheat gently with a little more milk. If necessary, strain the icing into a clean bowl. 10. Toss cake gently in coconut. Mike is joined by Denita Wawn, CEO of Master Builders Australia, who welcomes the long-awaited Review into the Australian Apprenticeship Incentive System, highlighting challenges in attracting and retaining apprentices, especially for SMEs. The building and construction industry consists of over 445,000 businesses, 98% of which are small, with SMEs employing 95% of apprentices but only 60% of first-years. Wawn stresses that labour shortages hinder addressing the housing crisis and that employing apprentices involves significant costs beyond wages. A strong incentive system should ease the financial burden, especially in the first two years, ensuring employers aren’t solely responsible for the 50% who don’t complete their training.
